
These are the last two recipes I made from the Garlic Cookbook. I’m sure that I will be trying more from this cookbook. I really like this one. I made a few vinaigrette recipes from the cookbook that were not mentioned in this blog. Of course, I loved each one of them. It has become a “go to” cookbook for me.
The Pasta and Pesto recipe was good, but the Pasta with Roasted Garlic and Basil sauce is definitely my favorite. It was one of the first recipes that I made from this cookbook, but I added meatballs and vegetable for a complete meal. I made the Roasted Garlic and Basil sauce again with just the pasta and it is absolutely my favorite. The Pesto recipe below is good, but not my first choice.
The Garlic and Honey Carrots recipe was good and very easy. I didn’t cook the carrots in a steamer basket as the recipe directs and they still turned out delicious. Below are both recipes with a few added suggestions.

Pasta with Pesto
Serves 6
2 c. fresh basil leaves
3 cloves garlic
1 c. olive oil
1/4 c. pine nuts or walnuts, toasted
1/4 tsp. pepper
1/2 c. Parmesan or Asiago cheese, grated
16 oz. pasta, dried
For pesto- combine basil, garlic, olive oil, nuts and pepper in a food processor or blender. Blend 15-20 seconds until a loose paste forms and the basil is finely chopped. Pour into a bowl and stir in cheese.
Cook pasta according to package directions and drain. Return to pan and add pesto according to your liking and mix. Serve with any remaining pesto and additional grated cheese.

Garlic and Honey Carrots
Serves 4
3 c. carrots, sliced
2 T butter
1 T honey
1 clove garlic, minced
1 tsp. onion, minced
2 T raisins
1 tsp. brown sugar, firmly packed
1/4 tsp. dill weed, dried
Cook carrots over a steamer or in the microwave with water until tender crisp. While carrots are cooking, combine butter, honey, garlic, onion, raisins, brown sugar and dill weed in a small saucepan. Cook over low heat until onion and garlic are soft. When carrots are done, combine with the sauce and serve warm. So easy and tasty!
I thought that I was done with garlic as the focus ingredient, but more garlic recipes to come!
