I’m sharing a couple of my current favorite dishes. I have a lot of favorites and they change throughout the season and the years. But my current ones were both found online- Sweet and Spicy Grilled Tofu https://thefitchen.com/sweet-spicy-grilled-tofu/ and Garlicky Mushroom Sheet Pan Gnocchi https://twomarketgirls.com/galicky-mushroom-sheet-pan-gnocchi/ . I liked them together because they are my favorites, but each of them go well with other food.
The Sweet and Spicy Grilled Tofu is especially good with rice and vegetables or ramen and vegetables. The first time I made the recipe I followed the directions and cooked it on the grill, but the next time and every other time since I make it in the Air Fryer. It is ideal for the Air Fryer. I also made some changes with the marinade which I will tell you about in the directions.

Sweet and Spicy Air Fryer Tofu
Serves 2
14 oz. extra firm tofu
3 T pure maple syrup- it’s worth spending the extra money on pure maple syrup
2 T soy sauce
1 T olive oil
1 T or to taste hot sauce
Drain liquid from tofu and wrap in a clean towel. Place it between 2 plates. On top plate put a heavy skillet or large can. Let drain for about 30 minutes. Meanwhile mix in a small bowl or glass measuring cup the maple syrup, soy sauce, oil and hot sauce. Wisk to combine and set aside.
Unwrap the tofu and cut into cubes. Place the tofu cubes in a flat shallow dish and pour the marinade over the tofu. Very gently mix the tofu so all of the cubes are coated. Place in the refrigerator and marinade for 30 minutes. During the 30 minutes gently mix the tofu 3-4 times.
After marinating, spray the inside of the Air Fryer basket lightly with cooking spray. Heat the fryer for 5 minutes on 4000. When the fryer has heated, using a slotted spoon place the tofu in the basket and air fry for 10 minutes. Then shake the basket or I like to use a plastic spatula to redistribute the tofu. Air fry for another 10 minutes or less depending on how crispy you would like it. Be careful not to cook it too long or it will get tough.
While the tofu is cooking, warm the reserved marinade in the microwave or stovetop. Place the cooked tofu in a bowl and pour the warmed marinade over the tofu. It is ready to eat. This is my absolute favorite way to make tofu- for now anyway!

The Garlicky Mushroom Sheet Pan Gnocchi is so incredibly good and very easy. I followed the recipe except I replaced the shallots for a 1/4 cup of diced onion. I never seem to have shallots on hand. I also replaced the vegan parm with regular asiago cheese. Other than those two things I followed the recipe. This goes well with any grilled meat, fish and of course tofu.
